Mashed Sweet Potatoes
Estimated time: 45 minutes.
What you need:
- Sweet potatoes (3 to 4 make a good portion)
- Olive oil
- Butter (no salt, 1/2 tablespoon per potato)
- Salt
- Black pepper
- Italian seasoning
- Nutmeg (a pinch, nutmeg is strong)
Get to it:
- Arrange potatoes on a pot, cover with water.
- Boil for at least 30 minutes, covered. (Potatoes should be soft internally, probe with fork.)
- Turn heat off. Remove the potatoes.
- Peel off skin of each potato. Should be very easy if they are properly cooked.
- Place all potatoes on a bowl.
- Salt to taste. Cover with black pepper. Sprinkle italian seasoning generously. Add a pinch of nutmeg.
- Coat with olive oil and add the butter.
- Mash with fork, turning the bowl to evenly mash it all. While mashing, mix the seasoning and make sure the butter is fully melted.
