Roasted Butternut Squash
Estimated time: 45 minutes.
What you need:
- One butternut squash
- Olive oil
- Salt
- Black pepper
- Italian seasoning
Get to it:
- Peel the skin of the butternut squash.
- Scrape out the seeds and all soft parts.
- Cut the squash in small pieces. (This is really the most complicated task, gets better from here...)
- Coat a roasting/baking pan with olive oil.
- Drop squash cubes/pieces, evenly spreading them. (Better if they are not on top of each other.)
- Salt to taste. Add black pepper, generously. Sprinkle italian seasoning all over.
- Coat on top of the seasoning with more olive oil. (It is OK to actually mix it all by hand, but not necessary if you spread it all evenly.)
- Bake at 425 F for 40 minutes, sometimes a bit more. (Done when some pieces are lighly burned on tips.)
