Simple Pot Chicken
Estimated time: 1.5 hour.
What you need:
- 5 pieces of chicken thighs (boneless or skinless, up to you. I like mine with at least the bones for this recipe)
- Carrots (4 or 5 medium sized ones)
- 1 onion (medium size)
- Garlic (to taste, finelly chopped)
- Olive oil
- Salt (to taste)
- White wine (1/2 cup)
- Seasoning: mix and match any of the below, until you find your taste.
- Italian Seasoning mix
- Cumin
- Smoked Paprika
- Thyme
- Rosemary
- Dry Mustard
Get to it:
- Use a large pot. Ceramic Dutch Oven works very well. But any large pot will do.
- Coat the bottom with olive oil. Be generous.
- Drop the garlic.
- Cut the onion (any size or style will do, make this dish yours), add to the pot.
- Slice the carrots, add them too.
- Turn on low heat (4 on electrical).
- Cover and let the vegetables cook for at least 15 minutes.
- Add the wine.
- Add the chicken thighs on top of the vegetables, and add the seasoning on top of it all. Don't forget to salt it.
- Cover and let it cook for at least 30 minutes. You might even lower the heat a bit.
- Turn the chicken pieces over and finally mix a bit the whole pot. Cover again and let it cook on very low heat for another 20-30 minutes.
- Taste to check the seasoning. Ready to serve!
