Uncle Luc Kale
Estimated time: 20 minutes.
What you need:
- Kale (any type, as many bunches you want, or your pot can take it)
- Butter (no salt, 1 tbs per bunch of kale)
- Olive oil
- Low sodium soy sauce (1/2 teaspoon)
- Sriracha (to taste)
- Minced garlic (1 teaspoon per bunch)
Get to it:
- Wash each kale leave individually, no need to dry.
- Roll the kale leaves in bunches, and cut the finest slices you can. (You want to end up with very thin strips of the vegetable.)
- On a large pot or pan, add olive oil to coat the bottom. Add the butter, garlic and turn on medium heat.
- When butter is almost fully melted, add kale. (Kale will reduce to around 1/5 of volume, so you can top the pot/pan.)
- Add the soy sauce and sriracha. Mix gently, the kale needs to cook evenly.
- Cover and let it cook for 5 minutes. Open and mix again. Repeat.
- When kale is fully reduced and turned a darker green, turn heat off, close lid and leave for another 15 minutes.
